Maize meal porridge or mielie pap is about the most popular food eaten in South Africa. And for the very fact that it’s rich in carbohydrates, is a great source of iron and contains a good amount of antioxidant properties. And let’s be honest who doesn’t love pap?
Loving it is one thing, but cooking it is another. There is definitely a knack to not overcooking it and avoiding those dreadful lumps.
We’re going to use an analogy that perhaps is a little silly, but still relevant. Cooking Pap is like riding a bicycle. You need to learn how to do it, practice a lot and continue doing it else you will forget how!

How to make mielie pap
His first tip is to make a paste. Using 1 cup of maize mixed with cold water to make your paste.
Then put 2 cups of water in a pot and once boiling you can add your paste and stir.
Once it starts to make bubbles, close the lid and let it to cook on medium hit for 3-5 minutes. Open again and depending on the thickness you can then add more maize (1 cup usually to get the right consistency). Be sure to add slowly as you stir, a little bit at a time. If you add all of it at once you are certain to have lumps. Then let it simmer for 3-5 minutes. Open again, stir and it’s ready!
