Stop thinking that there are no veggies that your kids will eat!
What we know: More often than not, when you mention the word “vegetables”, your child will pull a disgusted face and want to hear absolutely nothing more.
What we want: Our children to eat their vegetables.
What we must do: Get creative.
Below are 4 very easy, quick and healthy recipes to make veggie-eating tolerable and even fun for your little one.
Rainbow Veggie Kababs
You’ll need a variety of veggies (raw or cooked) and some sosatie sticks. Make sure you have some colourful options like tomato, yellow pepper, broccoli, cucumber, and carrots. Your children can help which makes it fun.
Kids like sweet things. Cut up some butternut, pour over some oil and something naturally sweet like agave or a healthier brown sugar blend. Bake in the oven and serve. Your children will love it.
Easy Spinach Balls
You will need cooked spinach, egg, cheese, onion, bread crumbs, butter, yogurt, and spices. Throw everything into a bowl and mix. Form little balls with your hands and bake at 180 degrees for 15 minutes. Easy and delicious!
Children like eating with their hands, they like dipping and they like nuggets. Grate some carrots, steam some broccoli. Mix this with 2 eggs, garlic, bread crumbs, parmesan cheese, oil and pepper in a food processor. Form balls with your hands and flatten. Fry in some oil for 4 minutes a side. Serve with some dipping sauce like tomato sauce or mayo.
Some more tips:
Marinade your veggies so they taste less veggie-like.
Make them not look like an actual vegetable.
Don’t use the word vegetable! Rather nugget, tasty kababs etc.
